Smoking Techniques   

Fuel
 
Gas is the quickest way to get your smoking project started. Only light half of the grill
 
and keep the fire as low as you can. Your pan of wood chips should be off the direct heat.
 
Charcoal is the best fuel for smoking because it adds its own flavor to the meal. My
 
suggestion is to eschew the briquette and use hardwood (sometimes called lump or cowboy)
 
charcoal that you can now find in many supermarkets.
 
Part of the fun of smoking is to add the scent of different woods to your meal. Whether
 
you’re using chips or chunks, all wood should be soaked in water for an hour before it is
 
thrown on the fire. Mesquite and hickory are the two woods often associated with smoking,
 
but apple, maple and oak add their own unique character
